Backyard BBQ - SF (Food Truck Manager)
SUMMARY
-
The Food Truck Manager is responsible for managing the daily operations of our Food Truck Fleet, including events, development, and performance of employees. In addition, they oversee the inventory, optimize profits, and ensure that guests are satisfied with their experience.

Will require being on the road 75% of the season (Food truck/trucks will based in Sioux Falls South Dakota from April - October). If you would like and if it makes financial sense, we will consider locations to send the food trucks from November – April each year.

Food Truck Manager will be responsible for execution of each event, hiring, development and performance evaluation of Truck employees. In addition, will help oversee the inventory and purchase of food and supplies, with the primary goal of optimizing profits and ensuring guest satisfaction with each Food Truck experience.

Keep food cost at 28% and labor at 20%.

Meet with the Director of Offsite Sales and Catering on a weekly basis to touch base about prior/upcoming events, discuss food truck sales and strategize to meet goals.

The Food Truck Manager reports to the Director of Offsite Sales and Catering.

If needed, will need to help with catering as season demands.
General
Financial

Responsible for all Cash and starting banks for all food trucks. Money sheets need to be filled out daily and signed and submitted to the Director of Offsite Sales and Catering.

Daily deposits to or nightly deposit drop offs as needed to the bank.
Food safety and planning
-
Enforce sanitary practices for food handling, general cleanliness, and maintenance of kitchen and food truck areas. Ensure compliance with safety/sanitation standards, federal/state/local laws, and ordinances.

Responsible for ensuring consistent high quality of food preparation and service.

Maintain professional food truck/special event image, including food truck cleanliness, proper uniforms, and appearance standards.

Estimate food and beverage costs.

Supervise portion control and quantities of preparation to minimize waste.

Estimate food needs, place orders with distributors, and schedule the delivery of
fresh food and supplies.

Knowledge of computers (MS Word, Excel).

Proficient in the following dimensions of restaurant functions: food planning and
preparation, purchasing, sanitation, security, company policies and procedures,
personnel management, recordkeeping, and preparation of reports.

Able to negotiate space to park food trucks on private property with property owners.

Weekly meetings with the Director of Offsite Sales and Catering to discuss the prior week’s events and events coming up.

Open Communication on all food truck matters with the owner and Director of Offsite Sales and Catering.

WORKING CONDITIONS

Position requires prolonged standing, bending, stooping, twisting, lifting products
and supplies weighing 45 pounds, and repetitive hand and wrist motion.
Vacation/Holiday Pay

Vacation accrues at .5 days per month (6 days per year), Must request vacation time 2 weeks prior to using vacation pay.

Paid Holiday’s (Easter day, Labor Day, Fourth of July, Memorial Day, Thanksgiving Day, Christmas Day & New Year’s Day (7 days per year))
Benefits
Income

If the offer is extended, the salary is $50,000-$55,000 based on experience per year with a minimum of 50 hours per week and you are required to work 80-85 percent of your hours onsite (warehouse or at the Food Truck events).

Bonus (3% of net sales from all food truck events (this requires scheduling employees and making sure each truck has the proper amount of product and supplies on it) if it’s a new event which Q Holdings - LLC hasn’t participated in the commission is 5%) If there is a cost or a percentage of sales that is taken out for an event your commission will be paid out after that expense commission has been subtracted.

Commission will be added to your paycheck weekly unless you opt to have bonus check (taxable) paid out monthly.
